Read this before you buy the GPS-only model

Apple's own wording is that to contact emergency services, the watch or a nearby iPhone "needs a cellular connection or Wi-Fi calling with an internet connection."

A GPS-only watch has no cellular chip of its own. If your father falls in the garden while his iPhone is charging in the kitchen, the watch will detect the fall, start the countdown, and then have no way to place the call. That is the single most common misunderstanding about using an Apple Watch as a medical alert, and it is why we point most families at a cellular model even though it costs more up front and adds a carrier line.

SE 3: the one most families should buy

The SE 3 does what a family actually needs from this watch: fall detection, crash detection, GPS, heart rate, emergency SOS, and 18 hours of battery. At $249 it is $150 less than the Series 11.

Spend the saving on the cellular version rather than on a higher model number. A cellular SE 3 that can call for help on its own is worth more to a person living alone than a GPS-only Series 11 with a nicer screen.

Series 11: bigger screen, longer battery

Series 11 costs $399 and adds a larger always-on display and a longer battery rating. For a senior with poor eyesight, the bigger, brighter screen is a real, daily benefit, and it is the main reason to pay the difference.

One caution on the battery figure. Apple rates Series 11 at 24 hours against 18 for the SE 3, but it also changed how that test is run. Treat it as somewhat better, not as a third more.

Ultra 3: only for an outdoor life

The Ultra 3 is $799, is always cellular, and runs about 42 hours. The multi-day battery genuinely helps if charging every night is the thing that keeps being forgotten.

It is also large and heavy. Most older adults find it too bulky and take it off, and a watch in a drawer detects nothing. Consider it only for a parent who is still hiking, sailing or working outdoors.
